Potato Upma Curry


Hi friends,im back after a lovely trip.The trip was amazing.im back here with lovely memories and cherishable moments.
Meanwhile I thought of the recipies running here....i think i missed some wonderful recipes in these days..but no probzz,this weekend i thought of going through the recipes that i have missed.
And coming to todays recipe..This is my fav vegetable,guess everyones fav.wtever may be the dish..if it comes with POTATO,then the dish will be simply delicious.This is a very simple and delicious recipe and my grannie used to prepare this esp on saturdays... dontno why??The name iteself tells us(the ingredients here are similar to semolina upma,but instead semolina we'll use potato) wt are the ingredients required to prepare this curry,lets check...

Hey forgot to say...my dad is very good at doing this curry :)

Ingredients
Potato
Onion
For Seasoning
Oil
Urad,Chana Dal,Mustard Seeds-1 tbsp
Jeera-1/2 tbsp
Turmeric-1/2 tbsp
Green chillies 4
Red Chillies 3-4
Ginger Paste 1/4 tbsp(optional)
Garnish
Curry Leaves
Cliantro
Lemon juice 3-4 tbsp(as per ur taste)
Directions:
Take Peeled Potatoes,cut them into cubes and pressure cook and mash them
Mean while chop onions,green chillies.
Now in a frying pan heat oil and add seasoning stuff in the above order..add onions now itself.Let them fry till onions turns to pinkish color.
Now add mashed potatoes,salt and mix throughly.
Garnish with curry leaves,cliantro and lemon juice..mix well
Goes well with rice,roti.
Note:My mom sometimes add tamarind juice instead of lemon....i prefer lemon :D

Hmmm...means 1998,doing my high school studies.When it comes to school and esp high school i enjoyed alot..at the most than anyone.Our school has a gr8 record of all round performence in the city and wtever science fair,elocution,painting,Dance,singing..v were the first to participate and grabbed alott of prizes.comin to my dept...i used to participate in dance,essay writing and comin to sports..throwball,volleyball etc.I have a gr8 bunch of frnz at that time and to everyones surprise v r still in contact with one another..i think that is one of the best part of my life.
If somebody asks me abt my schooling i can't end the topic like that..so itzz a bit elobarative ;)

Madatha Kaja(sweet rolls)in a diff look


I tried a very different recipe in a different way.I did Madatha Kajas...A very popular andhra sweet,Tapeswaram is very famous in doing madatha kajas.The difference is the shape of Kajas..Check my version of doing Madatha Kajas.

Ingredients:
1/2 cup-All purpose flour/Maida
3/4 tbsp-Baking Soda
Ghee
Rice Flour
Cardamon/Elachi Powder
Water
Oil

For Sugar Syrup
1 1/2cup- Sugar
1/2 cup-Water
Directions:
Mix maida,baking soda and elachi powder with water similar to chapathi dough.
Now make the as small balls...roll like chapathis.
Now on that add ghee and rice flour..make sure these should be distributed evenly and entirely.

Now roll the chapathi and cut into small rolls
Press the each roll with hand and make them flat
Heat oil a heavy bottomed vessel fry the rolls till it turns to golden brown color

Preperation of Sugar Syrup:
Meanwhile prepare syrup
In a vessel pour sugar and water.
Sugar melts and stir ocassionally...till there is thick consistency.
Atlast pour those fried rolls in the sugar syrup..make sure the syrup should be hot enough while ur transeferring rolls.
Take rolls from the syrup and serve.
Note:I want to make a diff shape,so i tried this.For actual kaja shape my mom told to cut the chapathi into ribbons and roll them carefully.

Trip to Vizag:

Hurray a small trip to vizag and araku with friends.Planned alott..(mischeif..hehehe).I travelled most parts of India with my parents only,but if it comes with friends..that wuld be rocking right...!!There wont be any restrictions and we'll rock at vizag beach.I've been to vizag so many times..but this is very spl 'coz itzz wid friends.Looking fwd to enjoy alott.At the same time miss u alott friends..im leaving 2mrow and will be back on monday(i guess..not decided yet..hehehe).

Im flattered,itz amazing...spellbound.Im new to cooking and you all people pampered me alott.Hardly three months and i received these many awards,so many new friends,new recipes and yeah with these memes even we are knowing abt our fellow bloggers.Isn't that wonderful...??absolutely amazing.

Today morning unusal(yeah today itzz saturday and all S/W engineers have office 'coz of some elections held last week and it was declared holiday on last thursday....very bad kada :( ... ) while i was hurrying to my office,i received a comment from Jamie.....and to my surprise itzz a lovely Inspirational award from her.

Onion Pakoda:

See Jamie gave a coffee cup inspirational award and im ready with a lovely snack..which is an all time favorite to every one.
First monsoon came and i was really happy...yuppiee,without any pause i started doing pakodis...a lovely combination for a cool,breezy weather.
whataa combo..watching rain from the window having coffee(i have jamie's cup now..hehehe) with pakodis.

Ingredients:
Chopped Onions 3-4
Besan flour 1/2 small cup
Rice flour 1/2 small cup
Green chillies 3-4
Soda(optional) 1/2 pinch
Water
Salt as per your taste
Oil
Directions:
Mix all the above ingredients except oil with water..make it as a paste
Heat oil in a pan and drop the paste as small drops.
Let it fry till it turns to golden brown color.
Remove from kadai and place them on a tissue paper,so that it absorbs the remaining oil
Pakodis are ready..for better taste serve with tomato sauce(optional)
Note:Rice flour is added for crispiness..if u dont want very crispy u can reduce the measure

Tamarind Pulihora and Some awards by Sireesha......

Tamarind(Chintapandu)pulihora...generally called as Pulihora.A very well-known authentic southindian recipe.By default for every other function and festivals people esp in my house pulihora is very common...starting from Barasla~Naming cermony to wt not for sankranthi,ugadi,diwali and the list goes on... :D.

My grannie and my aunt is very good at making pulihora..for a better and unique taste they add Mustard seed paste..in telugu we'll call "Aava" to pulihora...gosh the taste is as unqiue as any other hand made pulihora's.
Though we have pulihora in our house very common,I love eating "Pulihora prasadam" from temples..standing in the queue and getting handful of pulihora and eating..that feels like heaven.
I love eating pulihora made by my aunt(grannie is no more :(.... ) and the pulihora at temples,esp tirumala venkateswara swami's pulihora prasadam..such a delicious one, still a mystery wt all the'll add for pulihora.Whenever we were been to tirupati,Nanna used to give the pujari's 5 or 10 n used to get even more pulihora..n v enjoyed eating that.... :D
Even we can make Pulihora with left over rice also...
Here is my way of doing....

Ingredients:
Cooked rice
Tamarind Pulp - 1 cup
Turmeric powder - 1 Tbsp
Mustard seed Paste-1 1/2 Tbsp
salt per taste

For Seasoning:
Oil
Hing/Inguva
Chana Dal
Urad Dal
Mustard seeds
Peanuts
Green chillies
Red chillies
Curry Leaves

Directions:
First compelte the seasoning part..take a pan make oil to heat and add the seasoning stuff as per the order above.
Meanwhile for mustard paste grind the mustard seeds and keep that aside.
Now come the tamarind part..cook the tamarind pulp for 2-3 min sitll it thickens.
Now take a wide mouth plate 'coz u can mix well and in that add cooked rice add turmeric,salt,mustard seed paste,tamarind pulp and seasoning stuff.
Mix it well and add enough oil at the end if reqires....'coz the more oil u add,the more tast n tangy it'll be.
This will tastes more tangy as the hours pass on.
Enjoy with Curd.

Minapa Rotti~Urad Dal Rotis

Here comes one more south indian tiffin,if some one get bored of eating Idils,here comes a nice tiffin which replaces usual idly.
Generally nanna is not interested in idlis so some times amma used to prepare this insted of making idlis.
The ingredients are same as idly but here we'll make this as dosa
Ingredients:
1 cup urad dal/minapappu
1 1/2 cup Idly Ravva
salt per ur taste
Oil
Directions:
I think every one knows how to prepare idly batter....if not here is my(or my mom's)way of preparing...It varies from one to other.
Soak Urad dal overnight and grind it as thick batter.
Now add idly ravva which is cleaned thoroughly to the batter.
Dont sqeeze all the water while adding ravva 'coz this may cause idlies to become harden...this is my mom version... :))
Add required salt.

For Minapa Rottis:
Take required batter into a bowl add required amount out of water
Dont make this as dosa's kinda batter or as idly one.
Batter should be in a medium thickness.
Heat a non stick pan,take batter into a big spoon/garita/cup and spread it over the pan evenly.
Do this in a high flame...once it turns to golden brown color turn it other side let it be for 1 more minute.
Delicious Minapa Rottis are ready to serve.
We can use any kind of chutnys for this tiffin.
But nanna's fav is Avakaya or Honey n even i lov this eating with a pickle or honey.
Note:One can even garnish this with chopped carrot,oninon,cliantro...

Pudina Coconut Chutney~Pudina Kobarikaya Pachadi



Hi Friends,usually we try chutnies like Peanut chutney(palli Pachadi) or Coconut Chutney(kobbarikaya Pachadi) for Idilis and Dosas.
Every Saturday in our family at nights we wont have dinner but some tiffins on the name of Lord Venkateswara.Today our tiffin is Idly and This time I take a chance of trying some different pachadi and I came up with this.It came out really well and a very good combination for southindian tiffins.

Ingredients:
Grated Coconut-1/2 cup
Pudina-1 Bunch
Salt Per ur taste
Tamarind-Small Lemon size
Sugar-1/2 tbsp(optional)
Turmeric-1/2 tbsp
1/4 cup water (or as required)

For Seasoning:
Oil
Hing(optional)
Urad Dal -1 1/2 tbsp
Chana Dal -1 1/2 tbsp
Mustard Seeds-1 tbsp
Jeera-1 tbsp
Red Chillies-3-4

Directions:
Heat oil in a pan,add all the seasoning(popu) stuff in the above order.Keep that aside.
Now in the same pan add Pudina Leaves and keep that for awhile still leaves turns to dark color.
Now in the mixi jar add grated coconut,popu,pudina leaves,salt,tamarind,turmeric,sugar,water.
Grind finely.
Delicious pachadi/chutney is ready to serve for tiffins.

Birthday Bash with Eggless Plumcake~Boostup your Chargers


My "Mission accomplishing" task is almost ready n now im looking forward to the things that gonna happen within few hours.



Well...to breakup the suspense,here is a birthday coming up tommorow i.e on 29 May.My friend,my soulmate,my best buddy birthday n here i came with a plumcake.


My task is to make him surprise by taking this cake to his home..'coz he knows that im not a very good cook,initially i thought of ordering cake and then i just wait for a moment n thought of making it by own.

Its almost four years completed n we have a gr8 bond more than words between us.I gonna make him a very big surprise by arranging some b'day bash of my own style. He even doesnt know that im running a blog,i first thought of telling him after i got some award...later i thought it would be more surprise for him if i tried something for him and showing him at that time.


On this lovely occassion,this it to u my dear.....Sweetheart

Todi maine sare hi bandan jamane..Tere todungi na mein vaada....
Adha hissa meri tho dil ki kahani ka tu...Piya mein baaki aadha




Meri jaisa lakho mile hongi tughko piya...Mughe tho milaa tuuu hi....
Tuhi meri hoton ki kiltie huise hasi...Kilaa bhi kiya tuu hi

I was initially not a kinda cooking girl n im a bad cook,but without my notice from few months i have been developed alott of interest towards cooking,and this make me to try not even dals n snacks but even cakes n desserts :D.Today I came up with a Eggless plum cake,n I was on cloud nine...it tastes outstandingly delicious and though im not interested in sweets..i cant stop eating..droolling me completly.


Here the title is Eggless Plumcake~Boostup your chargers 'coz here I have even added Boost also...:D
Here comes my way of making cake


Ingredients:



1 1/2 cup-All Purpose Flour(Maida)
3 tbsp-Cocoa Powder
1 tbsp-Boost(optional)
1/4 tbsp-Salt
1 1/2 tbsp-Baking powder
1 cup-Sugar
1/2 cup-Water
1/2 cup-Milk
1/4 cup-Butter
1/4 cup-Cherries



Directions:
1.Mix all the dry ingredients first..i.e..Maida,cocoa powder,boost,salt abd baking powder
2.Mix all the wet ingredients i.e...water,milk,sugar,butter.
3.Stir continously until sugar dissolves in water
4.Now combine both of them and stir continously till u notice that there r no lumps as such



5.Now atlast add Cherries or any dry fruits of ur choice.


6.Microwave it for 30-35 minutes

Note:Here I added butter to wet ingredient,i think u can add this at last also i.e after mixing all and then..





By doing my first cake,i noticed that instead of making those heavy dals,gravies,curries...what not,this is the easiest one.But can't go eith this everyday considering the high calorie count :D

Celebrating My First Award with Kheer-Thank You Medhaa

Semiya Payasam or Kheer is a favorite sweet to anyone and very easy to prepare,this goes well even if tis hot or served chilled.
Ingredients:
Semiya
Milk
Sugar as per ur taste
Raisins
Cashews
Ghee
Elachi Powder

Directions:
Take a Pan,fry semiya till it turns to golden brown.Mean while boil milk and now add semiya to the boiling milk by stirring continously.Now add Sugar also.
In another pan,heat ghee n now add raisins,cashews or dry fruits of ur choice and fry them till turns to golden brown color,at last add dryfuits and elachi powder.
Kheer is ready to serve.

Note:I generally add 1/2 cup more milk than reqired 'coz itz easy to drink even :D

Bisi Bele Bath





Bisi Bele Bath...I first time tasted this in my neighbors house..vidya,they are from karnataka.Vidya's mom is a master in preparing this and I like this very much in the very first time itself.Aunty used to send this dish each n every time she prepared,n sometimes used to invite us to their home.we'll have a nice time over there....I thought of preparing this today and see how'ld be my hand made recipe,n it turned out really but not as the one made by aunty.
Ingredients:
1/2 cup veggies(potatoes,carrot,beans etc)
1 cup Rice
1 1/2 cup Turdal
Tamarind juice as per taste
Salt as per taste
Oil reqired
Bisi Bele Masala
Chana Dal
Urad Dal
Dhaniya
5 Red Chillies
4 Cloves/Lavanga
2 Cinnamon/Dalchini
1/4 cup grated coconut
For Seasoning
4 Red Chillies
Curry Leaves
Peanut
Ghee
Directions:
Pressure cook Rice and Dal(either seperately or mixing both),add at the same time cook veggies also.I cooked all the three at the same time putting in different dishes,this will save your time.
Meanwhile take a pan and fry all the masala ingredients and grind them into fine powder.


Take a heavy bottomed vessel,mix mashed dal,rice,veggies.Now add 3/4 cup of water,tamarind juice,salt per your taste.
Atlast take a frying pan and make tadka/popu.
Add popu to rice and mix well.
Serve hot with ghee and dahi

Sugarcane Juice~Cheruku Rasam


According to my school knowledge the world's largest producer of Sugarcane is India...well so i'm worth enough to participate in Sharuk's Paanchvi Pass(;).....lol):D.

Before starting how to prepare the juice,letzz know something more abt sugarcane gals...Sugarcane called as Cheruku in Telugu.Uses of sugar cane include the production of sugar, Falernum, molasses, rum, soda and ethanol for fuel. 

Have you ever thought of theremains of the crushing,well i thought that it may be used as feed for cows and buffalos,apart from that it is used in several ways like.... may be burned to provide both heat - used in the mill, and electricity - typically sold to the consumer electricity grid, used as raw material for paper and cardboard, branded as "Environmentally friendly" as it is made from a by-product of sugar production.

Fiber from Sugarcane is also used to make mats, screens or baskets . This fiber is also used inUpanayanam a rite-of-passage ritual in India and therefore is also significant religiously.

Usually we get this in summer season.We'll found sugarcane juice shops in each n every corner of our gullies and god the taste is simply mmm...mouthwatering.When I was i my granny house..a small village in Andhra Pradesh..v used to eat Sugarcane with bare tooth n taste is...hmmm.I think every body once in their lifetime did this....n how wonders if keep on chewing,the juice will be really tasty....!!!

I thought of preparing a juice something different and unusual(v wont prepare this@home).So I bought sugarcane from the shopwala..i told him to cut into very small pieces and as we all know wt r things we need to do this....I just tried this,it turned out really tasty.

Ingredients:

Sugarcane pieces

Lemon

Ginger piece(small one)

Crushed Ice

Directions:

Cut sugarcane pieces as small as possible and now take a mixi juice jar,add sugarcane pieces,ginger piece n crushe ice.Blend it well.Drain the juice,remove the pulp n once again blend the pulp.Do this till u feel that thats it.

Add lemon juice as per ur taste,chill it and serve juice with ice cubes.

Your summer juice an unusual one@ur home is ready :D

BagaladumpaVankaya Koora~PotatoEggplant Curry



Ingredients:
Podugu Vanakayalu/Eggplant(long ones) 5-6
Potato 1
Onion 1
Salt as per your taste
Turmeric 1/4 tbsp
Tamarind 2 tbsp
Red chilly powder
For Seasoning
Oil
Uradal 1tbsp
Chanadal 1tbsp
Mustard seeds 1/2tbsp
Jeera
Red chillies
Hing
Curry leaves
Directions:
Heat oil in a pan.Once oil gets heat,add all the seasoning stuff including onion and turmeric.Now add potato and keep a lid over the pan.stir occassionally.now add eggplant pieces tamarindpulp,again close the pan with lid.Once everything is done with add required quantity of salt and mix it well.
Goes well with rice or rotis


Note:For rotis add a 1/2cup of water..it'll be like a gravy one.

Tomato Dal/Pappu




Tomato Pappu..my all time favourite.If its served with white rice and ghee combination...wow really a mouthwatering dish.I donno how much i'll eat.....when it comes to tomato pappu.

Ingredients:
Tomatos
Toor Dal
Tamarind Pulp
3-4 Green Chillies
1/2 tbspTurmeric
Salt
Karivepaaku/Curry Leaves

For Seasoning:

Mustard Seeds
Pinch of Hing
3 Red Chillies
Oil

For Garnishing:

Cilantro/Kottimeera

Directions:

Cut Tomatos into small chunks,keep it aside.Cut green chillies and take tamarind in a bowl,pour water and make it as a paste.Microwave Toordal and tomatoes,then transfer cooked ingredients to a cooking bowl,add turmeric,green chillies,salt,tamarind pulp and curry leaves.Add curry leaves and even cilantro now itself..so that ull feel the real aroma...Cook that for 5-7 minutes.

Now comes the tadka part...thru which u can get the real taste.Heat oil in another pan..once oil gets heat..add hing,mustard seeds and at last add red chillies.
Transfer tadka to tomato pappu and atlast garnish with Cilnatro.

Enjoy with white rice and ghee.

Instant Mango Pickle


Instant Mango pickle is really one of my favourite Pickle.My grandmother used to prepare this in her own way,where nobody else can compete with her.The taste and the aroma of this pickle is simply superb while we eat this with combination with white rice and oil...the traditional way of eating pickle.This weekend my mom was ill and itz my turn to try recipes..n im da queen of my kitchen,so i thought of making this yummy n tangy one.

Ingredients:

1 Raw Mango

1/2 tsp Turmeric Powder

Salt to taste

For Powder:

6-7 Red chillies

1 tsp mustard seeds

1 tsp Fenugreek seeds

Pinch of Hing

Directions:

Cut the mango into small pieces and keep it aside.Heat oil in a pan,once oil heats add hing then add mustard and coriander seeds,once seeds starts spluttering add red chillies.Dont add Red chillies at first,it turns to black..n taste of the entire pickle changes.Now grind,and make as a kachha pachha powder where u shuld find some mustard seeds,dont make this as a smooth powder.

Now add the powder,turmeric and salt to the mango pieces

Mix it well and keep it aside for 6-7 hours...if u cant wait u can have at that time itself:)(which i usually do..!!).The more it preserves the more it tastes and it will remains for 5-6 days.

Dondakaya Vepudu/Tindora Fry


I'm very new to cooking..n im learning all these recipes thru some books/blogs etc., :).My dad encourages me alot...though daa dish doesn't go well(i mean previously nobody ever dare to taste my dish includin me :)))but nanna used to taste dat n used 2 inspire me.

Dondakaya Vepudu is a quite common fry,i used to prepare which is one of nanna's fav..so i thought of add it too my recipe cart..

Ingredients:
Dondakaya/Tindora(tender)
Onions
Peanuts/Peanut Powder
Turmeric a pinch
Salt
Oil
Redchilli powder
Grated Coconut(optional)
Directions:
Cut Tidora,onions to ur required shape,keep it aside.
Heat Oil in a Frying Pan n add peanuts,onions accordingly.add turmeric to dis...then add Tindora also,let it fry for 7-10 min...cover with a lid and fry occassionally.once dondakaya changes da color..it signifies dat ur dish is almost ready.Add required salt,redchilli powder and grated coconut powder
Note:if u wanna add peanut powder then add it while ur add salt and keep for a while

Banana Halwa

Ingredients

4 very ripe bananas
1 T vegetable oil or ghee
2 T sugar
1 T chopped, unsalted, peeled pistachios
½ T chopped walnuts
Directions
Peel the bananas ,deseed and mash them
Put the oil or ghee in a nonstick frying pan and set over medium-high heat.
When the oil is hot, put in the mashed bananas.
Stir and fry for 5 to 6 minutes.
Turn the heat to medium and stir and fry for another 10 minutes or until the bananas have browned and turned to a kind of soft toffee.
Turn the heat to low.
Add the sugar.
Stir for another 30 seconds or until the sugar has dissolved.
Add the pistachios and walnuts and mix in.
Cool to room temperature, then cover with plastic wrap until serving time.

Hyderabadi Veg Biryani

Hmm..wt to tell abt vegetable biryani??itz one of da most favourite dish for every one.now a days biryani is becoming more n more common but when it cums to hyd biryani....haa...wait for a while..!!itzz not as common as da other one,n 1ce u taste dat..u'll cum to know how biryani really tastes.v used 2 alott of hangout spots..especially Paradise 'coz itzz very near to our college,v used to celebrate lot of b'day parties over there......I missed those days really:((everyone used to order all da nonveg stuff but for veggies(like me) initially hyd biryani is not really tastey.......later i used hav biryani very common n i swear i really luv dat very much.I thnk everyone 1ce in thier lifetime should taste hyd veg biryani.

Ingredients
2cups Basmati Rice
100gm Beans
100gm Carrot
100gm Turnip
1/4cup Green peas
250gm Onion
2flakes Garlic
1/4" piece Ginger
2 Green chillies
2"piece Cinnamon
4 Cloves
4 Cardamom
Andhra moggu
1 Bay leaves
1/2tsp Salt
50gm Oil
100gm Ghee
1/4cup Chopped Cilantro leaves
1/4cup Chopped Mint leaves
20gms Cashew nuts
1/2 cup Salt bread (optional)

Directions
Wash rice and drain. Slice beans, carrots and turnip into thin long pieces. Cook these vegetables with green peas and keep aside.
Slice 1/3 of the onions and keep aside. Grind the remaining onions, ginger, garlic and green chillies into a fine paste. Dry roast andhra moggu and coarsely grind it along with half quantity of cinnamon, clove and cardamom.
Heat oil and ghee in a vessel and roast bay leaves and the remaining cinnamon, clove and cardamom. (Reserve some ghee for frying cashew nuts and salt bread) Add sliced onion and saut till golden brown. Add ground paste kept aside and fry.
When it's done, saut well with ground cinnamon and add rice, fry for a while. Add salt to taste along with 4cups of water and mix well. Close the vessel and cook the rice on a low heat. When it is done add the cooked vegetables and boil for some time. Finally add chopped cilantro and mint leaves.
Cut the salt bread into fine pieces and deep fry in ghee or oil until they become crisp and brown. Fry cashew nuts in the same ghee.
Before serving the biriyani, garnish it with fried cashew nuts and salt bread.

Oats Dosa.....


Ingredients:
oats 1 cup
green moong dhal 2 cups
green chillies 6 to 8
salt to taste
chopped coriender
oil for preparing dosas
Method:
Drain the water from the soaked dhal add all the ingredients and make a smooth paste adding little water in a blender.
Add chopped coriender and prepare dosas on a nonstick tava.
Goes well with Peanut chutnety........
Tips:This is a very nutritious and a healthy break fast adding chopped onions, grated carrots or chopped coloured capsicums makes it more nutritious and colour ful!!
